Our Chef welcomed special guests from Luxembourg recently, and in the spirit of culinary diplomacy, he decided to rework the classic Luxembourgish comfort food of Kniddelen (a dumpling or gnocchi of sorts), and add a California twist. You nailed it, Chef Matthew Dolan. These were delicious and you made some ‘Bourgers happy!
Here’s a peak at a memorable dish our Chef prepared for special guests last night: halibut collars in a flavorful broth (A riff on Tentsuyu made using smoked fish skins that otherwise could have been wasted, and lightly kissed with ginger and citrus). Wild-caught right off our coast, halibut is one of the most sustainable fishes, including its often discarded collar. Chef Matthew Dolan is passionate about sustainability, especially seafood, and on this , he wanted to highlight the importance of total product utilization. By making smart choices, together we can make waves.
Slow Food Know Fish Dinner
The Slow Food Know Fish Dinner here at 25 Lusk was a blast last night! Knowledge meets community, sustainability, and generating more awareness as to the importance of sustainable and thoughtful sourcing. Hearing the tales from those catching the fish we ate brought a full circle, the local natural wines were perfectly paired, and it was just meaningfully fun and awesome. Thanks to everyone who made it happen!
